Zatarain's yellow rice (1 box prepared)1 c. bay scallops1 c. shrimp8 oz. tilapia fillet cut into about 1x1 in pieces(about 2 fillets)1 c. diced red pepper1 c. diced onion1 whole fresh pineapple choppedunsalted butter for sauteeing (about 4 tbsp)
Prepare yellow rice according to box stovetop directions.
Sautee diced pepper and onions in butter until soft; set aside.
Sautee chopped pineapple in butter until golden and carmelized; set aside.
Sautee seafood until cooked through; season to taste
Mix all ingredients in large bowl and serve.
