Broccoli and Shrimp Chowder

Ingredients
1 med uncooked Yukon Gold potato, diced2 C broccoli florets1 med shallot, minced2 C FF chicken broth1/4 t dried thyme1 lb cooked shrimp, peeled (med size)1/2 FF sour cream1/2 C FF skim milk1/4 t salt1/4 t pepper
Directions
Combine potato, broccoli, shallot, broth and thyme together in a medium size pot. Bring to a boil, partially cover and cook until begetables are tender, about 15 minutes. Pour soup into blemder and puree, return soup to pot.
Add remaining ingredients to pot, simmer until hot, about 3 minutes. Don't boil.
