Apple Bran Muffins

1 cup packed brown sugar1 egg1 cup buttermilk3 tbsp margarine, melted3 tbsp fancy molasses1 1/2 cups natural wheat bran1/2 cup flour1/2 cup whole wheat flour1 tsp baking soda1/2 tsp baking powder1/2 tsp salt1 cup finely chopped, peeled apple3/4 cup chopped dates
Combine first 5 ingredients in large mixing bowl. Combine bran, flours, baking soda, baking powder and salt. Stir into liquid ingredients. Mix well. Stir in apple and dates. Spoon into 12 greased muffin cups. Bake at 400 degrees for 15-23 minutes, or until set.
You can replace the dates with raisins. You can also use muffin cups but I just use cooking spray.
