1 package aldi's "chefs cupboard" au gratin mix, the potatoes and the sauce mix (use both)1 quart home canned tomato puree or 2 cans purchased tomato sauce or 1 can sauce and 1 can stewed tomatoes1 lb ground turkey, or 3/4 lb extra lean ground beef1 ear sweet corn, cut off the cob, i use home-frozen, but you can use 3/4 cup canned corn instead1 large bell pepper chopped, red or green or 1/2 of each1 pkg taco seasoning2 cloves minced garlic1/2 cup chopped onion
brown the ground beef or turkey in a dutch oven type pan along with the garlic, drain any fat. add all other ingredients, bring to a boil over med-high heat, then turn down heat to med-low and simmer covered stirring occasionally for 25 minutes. Check potatoes for doneness, if not done enough, simmer covered 5 more minutes. If you want it a little thicker, simmer a while longer uncovered.
