Healthy Breakfast Cookies

Ingredients
2 cups of Uncle sam cereal or 3 cups bran cereal, crushed (when crushed, it equals ~2 cups)2 cups oatmeal2 tablespoons flax seed meal or wheat germ2 tablespoons cinnamon½ cup plain FF greek yogurt1 cup cinnamon applesauce1 teaspoon vanilla extract½ cup honey1 large egg½ cup skim milk1 teaspoon baking soda1 teaspoon baking powder¾ shredded carrots
Directions
1. Preheat oven to 350 degrees F. Line two large baking sheets with parchment paper and set
aside. In a medium bowl, combine cereal, oatmeal, flax seed meal and cinnamon. Mix well
and set aside.
2. In a large bowl, combine yogurt, applesauce, vanilla, honey, egg and milk. Mix well. Add
baking soda and baking powder and mix well. Gradually add the cereal-oatmeal mixture to
the yogurt mixture and stir after each addition. Fold in the carrots.
3. Roll heaping tablespoons into balls with your hands and place on prepared baking sheet.
Lightly press down on the ball to flatten it. Bake in the preheated oven for 15-18 minutes
