Chia Meatloaf

1/2 cup V8 Vegetable Juice, Low Sodium1 cup Lentils, mashed1 cup Onions chopped 1 cup Celery finely chopped2 cloves Garlic minced5 tbsp Chia Seed 1/2 cup of Bread crumbs1 1/2 pounds Lean Turkey, Ground Salt and Pepper
Preheat the oven to 350 F
Combine juice, lentils, onions, celery, garlic, salt and pepper in a bowl.
Add chia seeds and stir. Let stand for 15 minutes.
Grease a 5 X 9 loaf pan.
Add the turkey and bread crumbs to the mixture and combine all ingredients.
Put the mixture into the prepared loaf pan and cover with aluminum foil.
Bake until golden (about 90 minutes). Remove the foil for the last 10 minutes. Let stand for 15 minutes before slicing.
Serving Size: Makes 6 servings.
