1 egg, Grade AA Large1 mini red bell pepper, chopped1 mini yellow bell pepper, chopped1 medium slice button mushroom, sliced2 slices of pork tenderloin, chopped1/8 tsp Balsamic Vinegar1 tortilla 8' Multi-grain
Chop up the peppers in small pieces. Spray small cast iron skillet with Pam. While the peppers sizzle, slice mushroom and tenderloin. Add to skillet. Splash a little balsamic vinegar on it and saute for a few moments (just long enough to get meat warmed up), then place on tortilla. Scramble one egg with Pam (you can use same pan for added flavor to your egg) and add to tortilla. Roll up and enjoy on the go!
