1lb of Shrimp8 oz uncooked rice noodles-2 Tbsp fish sauce2 Tbsp lite soy sauce 2 Tbsp sugar1/4 tsp crushed red pepper1 Tbsp of olive oil3 tsp of egg whites2 garlic cloves, minced1 Tbsp of reduced fat peanutbutter4 choped green oinons1/4 cup of unsalted peanuts
Cook rice noodle acording to package. Mix fish sauce, soy sauce, sugar, and crushed red pepper in a small bowl. Set aside. Heat oil in large skillet with garlic, saute shrimp until done, add egg white untill scrambled. Add noodles, peanut butter and sauce mixture. Stirring untill heated. Add green onion and peanuts. 4 servings.
Very High in Sodium- will try with less fish sauce and soy sauce next time.
