Southwestern Chicken and Brown Rice Casserole

Ingredients
4 cups cooked brown rice2 cooked and shredded chicken breasts3/4 cup frozen corn1 can rinsed and drained black beans1 cup plain nonfat greek yogurt 1 small can chopped green chiles1/2 cup salsa 1 cup shredded cheese
Directions
Mix all ingredients together, making sure cheese and yogurt are evenly distributed. Sprinkle top with cheese if desired. Bake on 350 for 30 minutes. If your rice was precooked and is cold or room temp, I would recommend cooking a little longer.

Serving Size: I would estimate this makes 6-8 1 cup servings. Enough to feed at least a family of 4 with probably even a little leftover.
