Mama's Black bean and Corn Chili

1.5 lbs lean ground beef1 medium onion3 garlic cloves chopped1 can condensed tomato soup1/2 cup ketchup1 can dark red kidney beans1 can black beans rinsed and drained1 can sliced mushrooms / 1 cup fresh1 red (or green) bell peppers chopped3/4 cup frozen corn2 tbsp Chili powder or to tastecouple splashes hot pepper sauce (I like jalapeno sauce)salt and pepper to tastevinegar if needed
In a large pot or dutch oven saute ground beef, onion and garlic until cooked through. Drain fat. Add remaining ingredients and simmer for 20-30 minutes. Stir frequently.
Chili should be spicy and a little tart. If too sweet add 1 Tbsp vinegar or ketchup.
Makes about 10 1-cup servings
Serve with a little sour cream or a sprinkle of chedder cheese.
