Paleo Coconut Flour Chocolate Cake

1 cup Coconut Flour3/4 c. unsweetened Cocoa powder3/4 tsp. baking soda3/4 tsp. salt9 large eggs3/4 cup melted coconut oil (or Gehee or butter)1 cup plus 2 Tbls. Maple Syrup3/4 cup brewed coffee1 1/2 Tbls. Vanilla Extract
Preheat Over to 350
1. Mix dry ingredients together.
2. Beet Eggs in a separate mixing bowl with beaters. Then add the rest of the wet ingredients to the eggs.
3. Stir into the flour mixture.
4. Grease cake pans then line with parchment paper, or assemble your cupcake liners in muffin tins.
5. For the cakes - Bake for 30 minutes
6. For the cupcakes - Bake for 20 minutes
Serving Size: makes 2, 9 inch round cakes OR 24 cupcakes
