Molasses "Baked" Lentils (stovetop)

Olive Oil, 1 tbspBrown Lentils, 2 cupOnions, raw, 1 largeBrown Sugar, .5 cup, packed Molasses, .25 cup Vegetable Broth, 4 cupsChili powder, 2 tbspCider Vinegar, .5 cupTomato Paste, 0.25 cup*Ketchup, 3 tbspWater,2 cupCumin powder, 1 tbsp
Saute chopped onion in olive oil over medium heat.
Add lentils, vegetable broth, cumin, paprika, and chili powder.
Bring to a boil, then lower to a simmer and cook for 20-30 minutes, until tender (add additional water or broth as needed to maintain a stew like consistency).
Add remaining ingredients, tasting and adjusting as necessary.
Cook for an additional 10 minutes to allow flavors to marry.
Serve warm with flat bread and coleslaw!
