Trail Mix Quinoa Salad

Ingredients
Quinoa, 1 cup dryOrange, 1 fruit (2-5/8" dia)Olive Oil, .25 cup *Raisins, golden seedless, .25 cup, packedCranberries, dried, sweetened (craisins), 0.25 cup Carrots, raw, .25 cup, grated Toasted NoSalt Pumpkin Seeds, .25 cup Sunflower Seeds, without salt, .25 cup, hulled Almonds, .25 cup, slivered Coconut, toasted, unsweetened .25 cup Spinach, fresh, 2 cup Salt, 1 tsp (or to taste)Pepper, black, 1 tbsp (or to taste)Fresh Chives, 4 tbsp chopped Vegetable Broth, 2 cup
Directions
bring vegetable broth to a boil then add quinoa, reduce to a simmer for about 15 min or until all liquid is absorbed. you should see tiny spirals seperating from tha curling around the quinoa seeds.
While quinoa is cooking prepare the remining ingredents, juice and zest the orange, shred the carrots add all ingredients to a large bowl.
Once quinoa is done remove from heat and let stand for 5 minutes.
toss all ingredients together
can be served warm or cold
