Vegetarian Chili with Tofu

3 medium onions, chopped2 large carrots, chopped1.5 tbsp olive oil2 cans canned tomatoes (diced or whole)2 cans red kidney beans2 cans mushrooms2 blocks extra firm tofu, cut into 1cm by 1cm blocks1 cup frozen corn4 tsp garlic4 tbsp chili powder
Saute onions and carrots in olive oil over medium-high heat until onions are mostly cooked (approximately 5 minutes). Add all other ingredients and simmer over medium-low heat for an hour. Add more or less chili powder depending on how hot you like it!
