Creamy Pasta and Chicken

8 0Z Penne pastaOlive Oil, 1 1tspChicken Breast meat, cut into small piecesFrozen Vegetable Mix of your choice1 1/2 cups skim milk2 cups chicken brothabout 3 tbsp flour1/2 cup chopped raw onion2 tsp Garlic1 tbsp basil1 tbsp oregano1 oz shredded mozzarella cheese-low fat
In a large pan, heat the onion and garlic with the olive oil for about 3 minutes. Throw in the chicken and cook until done (about 5-10 minutes). Put the chicken aside. Heat the vegetables in the microwave or on the stove and cook the pasta. While those are cooking, add the broth, milk, and herbs to the onion and garlic mix. Let that mixture cook for about ten minutes on a high heat, stirring constantly. Slowly add the flour to help thicken the sauce. When the sauce is almost ready, stir in the cheese. Mix the sauce, chicken, pasta, and vegetables in a bowl and serve.
