Skim milk 9 ozSugar 1 tbspOlive oil 4 tspSalt 3/4 tspWhite flour 2 cupsDry oats 1/2 cupGluten flour 1 tbspDry yeast 1 1/4 tspChia seeds 2 tbsp
Put all ingredients into the breadmaker and run it on the dough setting. When it's ready, turn dough out onto floured board and flatten it, turning several times. Roll or squash it to fit a breadpan and press well into the pan. Prove 30-60 minutes, depending on warmth, and bake at 400 F for 25 minutes. Turn out of breadpan and cool on rack. Leave at least an hour before slicing.
