green chili enchiladas

Ingredients
1.5 lbs. ground meat1 cup finely chopped onions 1 Tbsp chili powdersalt & pepper to taste12 flour tortillas2 cups monterey jack cheese1-10 3/4 oz can cream of chicken soup1.5 cups sour cream1-4 oz can diced, green chilis
Directions
Brown ground beef and saute onion. Combine with chili powder, salt, and pepper. Reserve 1 cup cheese in a 1 quart freezer bag. Spoon enough meat mixture and cheese on each tortilla to cover a third of it. Roll tortilla beginning at the filled edge. Place seam-side down in a 13x9x2 pan treated with nonstick spray. When tortillas are completed, combine soup, sour cream, and green chilis to make a sauce; pour over tortillas. To prepare for serving, thaw and preheat oven to 375. Bake uncovered, for 20-25 minutes. Sprinkle cheese on top for the last 10 minutes. Makes 8 servings.
