Di2008's Roasted Chicken

1 whole roasting chicken 3-4 pounds1 whole onion, sliced or diced1 ounce lemon juice2 tbsp Goya Sofrito2 cloves garlic, minced
Preheat oven to 300-325 degrees. Wash and remove giblets from one whole chicken. Marinate chicken with lemon juice (this can be done a few minutes before cooking while you are preparing, do not throw out juice, reserve for basting). Chop one onion and place it in the chicken's cavity. Mince 2 cloves of garlic. Rub 2 tbsp of Sofrito all around the chicken then top with garlic. Insert prepared chicken into a baking pan uncovered. Place in oven. Give at least one hour per pound of chicken. Be sure to baste chicken with its own juices every 30-45 minutes to ensure flavor and a lovely roasted coating. Cut and serve once chicken has browned. Serves at least 6 3 oz servings. Enjoy!
Tip: add any extra chicken to a sandwich, salad, or tossed with pasta & vegetables for lunch the next day.
