Langostino, Black Bean and Corn Stew

Ingredients
1 large red pepper, chopped2 poblano peppers, chopped2 medium onions, chopped2 tsp olive oil1 15 oz can black beans, rinsed and drained1 14 oz can diced tomatoes with green chilis3-5 cups water1 pkg Trader Joe's Langostino Tails1 tsp ground cumin1 tsp chili powder1/2 tsp paprika1/4 tsp saltfresh ground black pepper, to taste4 T reduced fat sour cream
Directions
Saute onons until starting to soften. Add peppers and saute about 2 minutes. Add one cup of water and simmer until vegetables are cooked. Add corn, black beans, tomatoes, spices and 2 more cups water. Simmer for 15 minutes or so. Add langostino tails and simmer for another 10-15 minutes. Adjust proportion of liquid to your taste by adding more water if needed when you add the langotinos.


Serve in bowl topped with 1 T sour cream.
