Lentil soup with curry

Ingredients
2 tsp. olive oil1 cup onion, chopped1 cup carrots, diced3/4 cup celery, chopped1 tbsp. curry powder1 cup green/brown lentils, rinsed and sorted1 - 15 oz. can crushed tomatoes3 cups water2 packets Herb Ox sodium free bullion: beef, chicken, or vegetable.
Directions
Heat Oil on medium heat in a Dutch oven. Gently saute onions, celery, and carrots until softened. Add curry powder and stir into vegetables. Add lentils, tomatoes, water, and bullion. Bring to a boil, then reduce heat and simmer for 25 minutes,
