Green Chili and tortilla casserole

2 corn tortillas (6inch diameter)1/2 cup diced green chili peppers1/2 cup diced bell pepper1 1/2 tsps egg substitute1/4 cup lowfat milk1 1/2 ounces lowfat shredded cheddar cheese1/2 tsp dried parsley
Preheat oven to 375 degrees. Spray a small casserole dish with cooking spray. Tear 1 tortilla into bite sized pieces and spread over bottom of casserole. Top with half the geen chili and bell pepper, and half the cheese. Repeat layering. Combine the egg substitute with milk and parsley, then gently pour over casserole. Bake uncovered for 30 minutes, or until knife inserted in the center comes out clean.
Makes one serving, perfect for lunch.
