Beef w/Rice Soup

1 whole beef shank (soup bone w/meat)6 C. water6 each beef bullion cubes1 qt. home canned tomato juice1 C. brown long grain rice, uncooked1 T. parsley flakes
Place soup bone, water, bullion and tomato juice in soup pot. Bring to a boil, reduce heat and simmer until meat falls off the bone. Remove from heat cover and cool overnight in refrigerator. When ready to finish remover fat from the top of soup, add rice and parsley. Bring to a boil, reduce heat, cover and simmer until rice is done.
