Lentil Soup with Vegan Italian Sausage

Ingredients
Ingredients:Olive Oil, 1 tbspOnions, raw, 1.5 cup, choppedGarlic, 2 clovesCelery, raw, 1 cup, dicedCarrots, raw, 1 cup, dicedLentils, 1-1/2 cups, rinsedStock, vegetable low sodium, Trader Joes, 6 cupsBay Leaf, 2 leavesTomatoes, canned diced, Trader Joe's Organic, 3 cupsTomato Paste, 1 tbspItalian sausage, meatless Traader Joe's, 4 servingRed Wine, 4 fl oz*Lemon Juice, 1/4cupLea & Perrins, Worcestershire Sauce, 1/4 cupBrown Sugar, 1 tbsp
Directions
Heat oil in stock pot. Add onions and cook until soft. Add celery, carrots and garlic and stir for about two minutes. Add lentils, stock, bay leaves, tomatoes and paste. Bring to a low boil simmer on low for one hour.
Cube the sausage, set aside.
Mix wine, lemon juice, Lea & Perrins and brown sugar together and set aside.
After soup has simmered for one hour add the sausage and wine mixture to the soup. Simmer for about one half hour longer. You can garnish soup with green onions, cilantro or a bit of vegan sour cream.
