Chicken & Spinach Casserole

Ingredients
2 1/2 C uncooked wheat pasta2 C cooked chicken breast, cubed1 can reduced fat cream of chicken soup2 tsp season salt1 - 10 oz package frozen chopped spinach, thawed and squeezed dry (a potato ricer works very well for this if you have one)1 C low fat cottage cheese3/4 C shredded part skim mozzarella
Directions
Cook noodles according to package directions. Combine chicken, soup, and seasoning in a small bowl.
In another bowl, combine spinach, cottage cheese and 1/2 C mozzarella.
Drain noodles and put half in the bottom of a 2 qt baking dish coated with non-stick cooking spray.
Layer with half of the turkey and cottage cheese mixture. Repeat layers.
Cover and bake at 350 for 35 minutes. Uncover, sprinkle with remaining cheese. Bake 10 -15 minutes.

You can use leftover turkey if you have it and you can use fat free cottage cheese if you prefer.

    I thought this was very good. I added basil, oregano, thyme, rosemary and garlic to the cottage cheese mixture since it already felt like I was making a lasagna.. I also used some graded Parmesan during the final baking stage.. - 9/12/09

    way too much pasta, for my taste. i added a lot of parmesan cheese to compensate for it being really bland. still really good; will definitely make again but cut the pasta amount in half. - 4/6/09
