Portugese Sausage and Spinach Soup

Ingredients
3 large potatoes, peeled & thinly sliced2 medium sized onions, thinly sliced1/4 t. pepper4 14.5 oz. cans chicken broth16 oz. chorizo sausageBoiling water1 T. butter
Directions
In 5 qt. pot combine potatoes, onion, broth & pepper. Bring to a boil, reduce heat, cover & simmer for about 30 minutes, until vegetables are completely tender. Defrost spinach & set aside.
Place sausage in frying pan in about 1/2" boiling water. Reduce heat & simmer, covered for 15 minutes. Drain, remove casings (if links), or crumble, (or slice links) & set aside.
Pour potato mixture into blender and whirl until smooth. Return pureed mixture to pot, add butter and spinach and cook over low heat, uncovered for about 3 minutes. Stir in reserved sausage & serve at once.

Serving Size: Makes about 3 quarts, or 6 2-cup servings
