Spanish Rice

Ingredients
1 c. Rice Select Texmati Brown Rice2 1/4 c. water1 c. chopped onions1/2 c. chopped celery1/3 c. diced green pepper2 tbsp. fresh or dried parsley3 tbsp. tomato paste, any flavor1 tbsp. chili powder1/2 tsp. salt5 cloves garlic minced
Directions
Dice, chop, and mince all vegetables. Combine all ingredients in a large saucepan that has a lid. Bring to a boil: stir once. Cover with a tight fitting lid or foil: reduce heat and simmer for 45 minutes. Remove from heat and let stand (covered) for 5-10 minutes longer.
Remove lid and fluff with fork.
