Quinoa Red Bean-Kale Casserole

Ingredients
Quinoa 1 cup Beans, cooked red kidney 2 cup Vegetable Broth 4 cup Kale, 2 cup chopped Extra Virgin Olive Oil 2 tbsp Basil 1 tbsp Thyme 1 tspAdd pepper and sea salt to taste
Directions
Step 1
Preheat oven to 375 degrees F. Bring vegetable broth to a boil. Add quinoa and boil for about10 minutes. Pour into casserole baking dish and add all remaining ingredients. Mix well.

Step 2
Bake uncovered for 30 minutes, then cover. Reduce heat to 325 and cook for an additional 15 minutes. Serve hot.
