raspberry meringue cookie bars

Ingredients
1 c flour1/3 c powdered sugar1/2 c butter3/4 c raspberry jam2 egg whites1/2 granulated sugar
Directions
mix flour, powdered sugar, and softened butter together. Press into a 9x13 pan. Bake at 350 for 10 minutes. Spread softened jam on top.

Beat egg whites until stiff. Slowly beat in 1/2 cup sugar. Spread on top of jam.

Bake an additional 25 minutes.

Makes 2 to 2 1/2 dozen cookies, depending on how you cut them.

    I was really excited about these, but they did not turn out at all like I had hoped. The crust was good, but the meringue needed less sugar and some cream of tartar. Good base concept, but needs some tweaking for me to truly enjoy. - 7/5/11
