Crab Quiche Florentine

Ingredients
Ingredients:1 tbsp olive oil1 cup onion chopped1 tbsp imitation bacon bits1 package Spinach, frozen, (10 oz) 2 cups liquid egg substitute1 cup 2% milk1 cup 2% Shredded Cheddar Cheese1 frozen, ready-to-bake 9" Pie crust1 cup imitation crab4 oz shredded swiss cheesesalt and pepper to taste
Directions
Preheat oven to 350 degrees
Heat olive oil in fry pan. Add onions, bacon bits, and spinach and saute until onions are tender, about 4-5 minutes. Remove pan from heat and let it cool. Meanwhile add milk and egg substitute along with both shredded cheeses into bowl large enough to hold all ingredients. Break-up imitation crab into bite-size. and add to egg mixture. Season to taste with salt and pepper. Add spinach mixture, blend and pour into pie crust. Place on underliner pan to prevent drips and bake for 45-50 minutes, or until pie is set.
