2 cups diced potatoes1 cup chopped mushrooms 1/2 cup chopped onions1 cup chopped spinach1/2 cup chopped peppers1 1/2 cup diced ham10 large eggs or egg beaters1/4 milk1/2 cup shredded parmesan
Spray 9X11 baking dish with pam, layer potatoes, mushrooms, onions, spinach, peppers, and ham.
Pour egg and milk mixture over top and sprinkle with cheese. Bake at 375 degrees for 30 mins or until eggs are set in center.
