10 oz. skinless boneless chicken cut into bite size pieces1 tsp olive oil1 tsp crushed garlic1/4 tsp garlic salt1 tsp Italian seasoning 1 Onion, Med1 Sweet Red Pepper2 tsp pesto sauce3/4 cup Ragu lite parm alfredo sauce4 oz Mushrooms fresh, sliced2 C fresh spinach
Heat olive oil and crushed garlic in large skillet over med heat, add cut-up chicken, garlic salt and Italian seasoning.
While chicken is browning chop up onion, red peppers and spinach into one inch pieces. When chicken is about half done (about 5 min) add onions and peppers to skillet. Cook 2-3 min, add pesto and Ragu lite alfredo sauce, bring to a simmer and cook 2-3 min more. Add sliced mushrooms cook 2-3 min add spinach cook 1 more min, just until spinach is wilted. take off of heat and serve over pasta.
Serving Size: Makes 4 1.5 Cup servings
