Eggplant veggie pizza

3 eggplant, peeled and cut into 1/4" slices1 onion, diced1 cup mushrooms, diced1 green pepper, diced2 cloves garlic, diced1 cup pizza sauce1/4-1/2 cup low fat mozzarella cheese1 tablespoon olive oil
Peel and slice the eggplant, salt liberally and let rest for 30 minutes to draw out the bitterness. Rinse and pat dry
Season with oregano, salt, pepper and basil. Bake at 425 for 10 minutes, flipping once. They should be tender, but not mushy.
In the meantime, heat olive oil in pan. Saute veggies until tender.
Once eggplant is cooked, top with pizza sauce, veggies and small amount of cheese. Return to over for 5 minutes, until cheese is melted.
Serving Size: Makes 10 3-slice servings
