2c. flour2tsp. baking powder**First two ingredients can be replaced with self-rising flour.2tbsp. sugar1/2tsp. salt2 eggs1.25c. milk~1c. oil (enough for frying)
1. Sift flour, baking powder, and salt together.
2. Whisk eggs, milk, and sugar together.
3. Combine dry and wet ingredients and mix well. Add more milk or water if necessary.
4. Heat oil in a sauce pan.
5. Using a .25cup measuring cup ladle batter into the hot oil. Bake both sides before removing from oil.
6. Use paper towel to absorb the excess oil.
Serving Size: Makes ~25 cakes.
