Turkey & Veggie Penne Pasta

1 lb Lean Ground Turkey4 medium carrots, sliced2 stalks of celery, sliced1/2 qt baby portabello mushrooms, diced1 lb Whole Wheat Penne PastaGarlic Powder, to tasteBasil, to taste2 tbsp. olive oil1 cup Chicken stock4 qt water
Bring water and chicken stock to a boil. Add Penne and garlic powder. Remove off heat after 5 minutes or when pasta is almost al dente.
While penne is cooking, brown meat in a skillet with olive oil and add in veggies, garlic powder and basil and roast until meat is cooked through.
Once meat is cooked through, pasta, with 2 cups broth to skillet. Cover and simmer for 10 minutes or until veggies are soft.
Remove from heat, sprinkle with Parmesan cheese if you desire and serve!
