Passover Vegetable Kugel

Ingredients
3 stalks celery diced3 carrots diced or shredded2 onions diced1 tbsp olive oil1 red bell pepper diced 10 oz package of mushrooms diced10 oz brick frozen spinach3 cloves garlic1/4 cup matzo meal3/4 cup liquid egg substituteSalt and Pepper to taste
Directions
In a large pan saute celery, carrots, onion in olive oil for 10 minutes. While that is cooking, defrost spinach and squeeze out water, set aside. Add bell pepper and mushrooms to pan, saute 5 minutes more. When vegetables are done cooking set aside to cool for 5 minutes. Preheat oven to 350, spray a 9x13 pan with cooking spray. Mix cooked vegetables, garlic, matzo meal, and egg substitute in a large bowl. Put in prepared 9x13 pan and bake for 50 minutes.
