Mini Beef Egg-Foo Young Bites

Ingredients
2.5 cups Bean Sprouts, cut up1 cup packed spinach, cup up½ cup chopped bamboo shoots, diced½ cup chopped water chestnuts, diced1tsp coconut oil for sauteing3 oz chuck tender steak, cooked and diced1tsp sesame oil4 Green Onions, diced1 Tablespoon Soy Sauce6 Eggs, beatensalt/pepper to taste
Directions
Preheat oven to 350 and spray mini muffin tin with non stick cooking spray. Saute all ingredients until just wilted and tender. Set aside to cool. Add eggs into medium sized bowl and beat. Once vegetable & meat mixture is cool, mix all ingredients together. Bake for 25-30 minutes. Let them cool a few moments and they should pull away from the sides of the tin and pop right out. Makes 36.
