Oscar Mayer Ham, 12 slicesEgg White (Naturegg Simply Egg Whites) 1 cupWhole Milk / Vitamin D, 0.25 cup Onions, raw, 0.5 cup, chopped Mozzarella Cheese, part skim milk, 4 oz Spinach, fresh, 2 cup Peppers, sweet, red, raw, sliced, 0.5 cup
Preheat oven to 375 degrees.
2.In a muffin or cupcake tin, press one slice of ham into each space.
3.Saute spinach and onion in cooking spray, water, or broth. (Caloric addition should be minimal, but factor in according to what you use)
4.Mix all ingredients but cheese in a bowl. Pour into each cup.
4.Season with salt and pepper, to taste.
5.Sprinkle red and green pepper on top of each egg.
6.Bake at 375 degrees for 10 minutes.
7.Remove from oven, sprinkle each egg cup with cheese and return to oven for 5-10 minutes (until eggs are cooked according to your taste).
8.Remove from oven and serve.
Serving Size: Makes 12 cups (3 per person)
