"Yellow Broth" Carrot & Spinach Soup

Ingredients
3 tbsp Olive Oil3 Celery Stalks, sliced1 Onions, chopped3 tbsp Flour10 oz Frozen Spinach8 Medium Carrots, washed and sliced2 bouillon cubes 6 cups Water1/4 cup 1% Milk or Soy Milksalt and pepper to taste
Directions
Saute onion and celery in olive oil for 5 minutes. Add carrots and saute for 3 minutes. Add flour and brown for about 2 minutes. Add remaining ingredients and simmer for 60 minutes.
