Tomato-Basil Couscous

2 tsp olive oil2 cloves garlic, minced1/2 cup chopped, fresh basil (or 2 tsp dried basil)1 1/4 cups water or vegetable stock1 cup couscous1 cup finely chopped tomatoes1/4 cup chopped parsleysalt & pepper to taste
1) In a medium saucepan, heat oil over medium heat. Cook garlic 2 minutes or until softened.
2) Add water (if using dried basil add now), bring to a boil. Stir in couscous. Cover and remove from heat. Let stand 5 minutes. Fluff with a fork. Stir in tomatoes, basil (if using fresh), parsley, and salt & pepper.
Serving Size: Makes 4 servings
