Low Carb Doughnut mufins

Ingredients
1 cup flax seed meal1 cup almond meal1 tbsp baking powder1 dash salt1/4 teasp nutmeg1 teasp pumpkin pie spice1 cup (equivalent) artificial sweetener (zero carb)1/4 cup apple butter1/4 cup fat free sour cream 2 eggs, beaten4 egg whites1/2 cup milk
Directions
. Preheat oven to 350 degrees F; spray muffin pan with non-stick cooking spray.
2. Mix dry ingredients well.
3. Add beaten eggs, melted butter and water to the dry mixture. Mix well.
4. Fill muffin cups a bit more than half way with the mixture.
5. Bake for about 20 minutes, until the tops are golden brown and a toothpick inserted in the center of a muffin comes out clean.
6. Allow muffins to cool in a pan for a few minutes, then remove and cool on a wire rack.
Store in an air tight container in the refrigerator.
