Granola French Toast - Racheal Ray

Ingredients
1/2 Cup Seedless Raspberry Jam1 Cup Fresh or Frozen Raspberries3 Cups granola4 large eggs2 Cups of Nonfat Milk8 - Slices of Potato Bread (any thick bread)5 Tbsp Light Stick Margarine
Directions
In a small saucepan, heat jam and 1/4 cup water over med heat. Stir in raspberries and remove from heat.

Using a food processor, grind the granola into fine crumbs. transfer to a wide shallow bowl. In a medium bowl beat the eggs and milk. Add the bread and soak until saturated. In batches, transfer the bread to the granola crumbs, heavily coating each slice.

In a large, heavy skillet, melt 2 1/2 Tbsp butter over med heat. Working in batches, add the granola-coated bread and cook, turning occasionally until golden. Repeat with the remaining bread slices. Serve warm with the raspberry sauce.
