Cabbage Roll Soup

1 large green cabbage, coarsly chopped1 lb 99% lean ground turkey breast1 medium onion, chopped1 cup uncooked brown rice2 6oz cans tomato paste2 1lb cans sauerkraut with liquid6 cups water (less or more as needed)1 tbsp paprika3 bay leavesSour Cream for topping
Cook onions and ground turkey in a 6qt pot.
Add cabbage, sauerkraut, and water and let the cabbage cook down a little
Stir in tomato paste, paprika and bay leaves.
Add rice.
Cook until cabbage and rice are done, or simmer longer for added flavor.
Serving Size: Makes 6 qts or 12 2-cup servings
