Quick Mexican Chicken Dish

Ingredients
1/2 can Sweet Yellow Corn1/2 c chopped green pepper1/2 c chopped onion1/2 can of Hunt's Diced Tomatos Sweet Onion4 Servings of instant brown rice1 box Tyson Fajita Chicken Strips4 oz. Mozarella Cheese1/2 package of low sodium taco seasoning
Directions
Add taco seasoning to rice then microwave per package instructions.
Coat skillet with non stick cooking spray and place over medium heat. Chop onion and green peppers and add to pan, allowing them to sautee for 2-3 minutes. Add entire bag of chicken strips, corn and tomatoes and allow it cook for 3-5 minutes or until chicken is tender.
When finished cooking, dish one serving of rice and chicken mixture into a bowl and top with one oz. of mozarella cheese. Serves 4. Enjoy!
