Pho Noodle Soup (vegan, wheat free and soy free)

Ingredients
6 tsp better than boullion vegetable broth1 can sliced water chestnuts1 bunch of green onions (1/4 cup)10 cups of water4 cups of diced carrots
Directions
add vegetables & kelp powder to water & broth, bring to a boil, turn down the heat. Simmer awhile.

Meanwhile on the side, boil rice noodles. Drain. Add a portion of rice noodles to your bowl, add your broth on top. Top with a sprig of fresh basil.

Season to taste. (Perhaps add a few drops of sesame oil and fresh squeezed lime to your bowl of soup.)
