Black Beans & Rice

Ingredients
1 cup chopped onion1 cup chopped green bell pepper2 tsp chopped garlic1 1/2 tsp ground cumin1 tsp dried thyme leaves1/2 tsp crushed red pepper1 bay leaf1tbsp extra virgin olive oil1 cup Uncle Ben's Whole Grain Brown Rice1 can (14.5) ozRotel diced tomatoes with green chilies1 can (15) Kuner's black beans2 cups water1 tbsp cider vinegar1/2-1 tsp salt1/2 tsp black pepper
Directions
Saute onion, bell pepper, garlic, cumin, thyme, crushed red pepper and bay leaf in olive oil until onion is tender, about 5 minutes.
Stir in rice, tomatoes, black beans, water, vinegar, salt and pepper.
Heat to boiling. Reduce heat and simmer, covered, until rice is tender, about 20 minutes. Let stand 5 minutes before serving.
