Coconut Curried Shrimp

Ingredients
1/2 cup coconut milk (unsweetened)1/4 cup lime juice1 Tbsp. curry powder1 tsp. ginger root1 lb. shrimpsalt and pepper, to taste2-3 scallions, chopped (optional)1 Tbsp. toasted sesame seeds (optional)
Directions
Mix the coconut milk, lime juice, curry powder, and ginger root in a small saucepan and bring to a boil. Reduce immediately to a slow simmer for 30 minutes, stirring occasionally.

Peel shrimp and broil for two minutes on each side, seasoning with salt and pepper, to taste.

Put the shrimp on a plate and spoon sauce over it. Serve over rice or pasta. Garnish with chopped scallions and toasted sesame seeds, if desired.
