Honey Dijon Pecan Crusted Salmon

Ingredients
4 4oz Salmon fillets8 tsp Honey Dijon MustardI Can't believe it's not butter butter spray1/2 cup chopped pecans1 cup dry bread crumbssalt and pepper to taste
Directions
Preheat oven to 375 degrees. Spray baking dish with cooking spray and set aside. Mix dry bread crumbs and pecans and place on plate. Spray salmon fillets with butter spray and spread honey mustard on both sides of fillet. Roll fillets in bread crumbs and pecans and place in baking dish. Cook 8-12 minutes until fish flakes when pierced with fork. Great with a mango-kiwi fruit salad! Makes 4 servings
