Chicken & Brown Rice with Veggies

1 cup Jasmine Brown Rice (cooked)1/3 cup Red Pepper (diced)1/3 cup Broccoli (small pieces)1/2 cup Red Onion (diced)1 clove of Garlic (minced)1/4 cup Kale (ripped into small pieces)1/4 cup baby spinachsalt and pepper to taste1 T olive oil 1/2 t soy sauceI 3oz thin sliced chicken breast
I like to cook my rice a head of time in a rice cooker. I add 1/2 of the oil to a preheated pan and pepper chicken and place in center of skillet. I let cook till I see brown crust at thinnest edge of chicken breast. Flip Chicken, add the remainder of oil and veggies. saute until greens are wilted and onions are golden. Add splash of soy sauce cook one more minute and remove from heat. I put chicken and veggies over rice and enjoy.
