Lemony Garlic Pasta with Italian Sausage and Greens

Ingredients
1/3 cup extra-virgin olive oilJuice of one lemon, zest peel first2-3 cloves garlic, chopped1 package (12 oz) chicken Italian sausage, sliced bite-size1/2 pound WW/WG pasta (about 8 cups cooked)1 package greens (arugula, spinach or other baby/bitter greens) - about 10 cups loosely packed1/4-1/2 cup grated parmesan
Directions
Zest lemon, then cut and juice entire fruit into olive oil - whisk to blend. Season with salt and pepper to taste.

Cook pasta al dente (save some of the pasta water). Meanwhile, slice sausage and brown in a pan big enough to hold all ingredients. When sausage is near done, add garlic and saute about one minute. Add cooked pasta, lemon/olive oil dressing and greens. Toss to combine and wilt greens. Add reserved pasta water to thin if desired. Re-taste for seasoning. Add cheese to each serving - Enjoy!
