Duck Cornbread

Ingredients
Buttermilk, lowfat, 1.5 cup*Leavening agents, baking powder, low-sodium, 2 tspBaking Soda, 1 tspYellow Cornmeal, 1.75 cupTrader Joe's White Whole Wheat Flour, 188 gram(s) Egg, fresh, whole, raw, 3 small (my chickens are giving PeeWee size eggs at this time, 1 large will suffice)Carrots, raw, 1.5 large (7-1/4" to 8-1/2" long) choppedScallions, raw, .5 cup, chopped*Bean sprouts, 0.5 cup choppedDuck, without skin, 8 oz ground
Directions
Brown ground duck, carrots, onions, and bean sprouts in cast iron skillet. While that cooks, combine dry ingredients, add milk and egg, stir enough to combine no more no less. Stir in duck mixture, melt a bit of butter in the pan you cooked the duck in, pour everything back into the pan. Bake at 375 for 25-30 minutes.
